I had no idea there was holiday events, I bet the servers are always in queue.
You can only get hunter pets if you're a hunter. Once you get to a certain level (I think it's 10), hunters get a quest that allows them to find and tame a pet.
If you buy the cats from the lady (or get any other vanity pet), once they're in your bag you right-click on them. You will "learn" that pet. Then click the button that allows you to view your character's gear set up etc. (the one with the picture of your character on it) and there will be a tab called pets. The cat you bought will appear in there. If you right click on it, the cat will appear and follow you around until you either die or fly somewhere. Mounts work the same way. Once you hit level 30 and buy your mount, you'll have a sub-tab for mounts on your pets tab.
I've had good luck with server queues so far. I play Horde on Ravenholdt and I've never had a queue. I have a couple of Alliance toons over on Earthen Ring and every once in a while I'll run into a queue there. The only other server I've ever encountered a queue on was Moon Guard and apparently it's pretty common. I put a couple of toons on there not realizing that it's apparently the server where all of the hardcore RP'ers like to gather, so it's got tons and tons of players who do nothing but sit around in the inns.
If you open up the achievements window (on your toolbar at the bottom with the other buttons) and look at the World Events submenu, you'll see all of the various holiday stuff that they do. They just finished up Midsummer and I think next is Brewfest in October.

Still, for a player that loves to solo like I do and is primarily interested in PvE, there are worse choices. They're only slightly less indestructible than pallies (and because the toon is a Dranei and has the profession of herbalism she's got healing options) and since the addition of Titan's Grip you can pretty much mow down anything that gets in your way in only a couple of swings.
