I actually think I use grey when I am trying to sound more intellectual and high-society. For example, if I was composing something, I would write it as "The sky was a harsh, bitter smattering of shades of grey". Whereas if I was just IMing someone, I would say "gray".

Garner's Modern American Usage says the following on the subject:
gray; grey. The former spelling is more common in [American English], the latter in [British English]; both are old, and neither is incorrect.
