Who says that the last episode cannot span a few days? To say whoever he intends to give the ricin to will not likely die in the series doesn't make sense. Gilligan said that the ending wont be ambiguous one bit, so whoever gets the ricin, we will most likely see their death.
For some reason, I doubt that we will see Jesse experience a week long bout of nausea, diarrhea, and seizures. Remember when Gilligan ended a season with Jesse pointing a gun at Gale's face? Gilligan didn't intend for that to be ambiguous yet we never saw Jesse pull the trigger. Considering the median lethal dose of ricin is 1/228 a standard aspirin tablet, I'd say that Walt using the ricin on any character would indicate the death of that character without ambiguity.
