i find it hard to believe that troy loney went to applebees, let alone that they have fish tacos on their menu, and even then, that youd order them

You have to remember fish tacos originated in the Baja region of Mexico. So you aren't going to find a whole lot of salmon in their diet.

I don't like grilled fish tacos nearly as much as like fried fish tacos, but each requires a different type of fish. I have found that grilled fish tacos are just about the only acceptable use for tilapia. For frying, I like flaky-fleshed fish (say that three times fast) like bass, grouper, cod or halibut. Halibut is crazy expensive, and frying tends to mask its flavor, so I really only use that fish if I'm cooking pre-frozen fillets. We have access to a pretty good supply of rock fish (a type of cod) which is what I tend to use most often.

But most important of all - and this is true of any seafood you cook - the single most important ingredient is the freshness and quality of the fish. If your market has cod, but it smells of butt, don't buy the cod.

Also, when I say freshness is the most important ingredient in cooking fish, remember: roughly 60% of all fish sold in this country for public consumption has been frozen prior to reaching the consumer. (60% of all fish, but 100% of all salmon sold in this country) Even most of the best sushi restaurants 'age' some of their fish in a deep freezer for months before serving. Superfreezing fish (core temp -70°F) can put off spoilage for up to two years.

So 'fresh' is kind of a relative term.

I've never seen that in my life. Its always been cod, grouper, halibut, etc.

I'll make a quick and easy version at home sometimes with pan-fried tilapia, which is perfectly acceptable. I've been to a couple high-end Mexican places that make them with seared ahi tuna, which is pretty good, but my favorites are usually from a hole-in-the-wall type of place that does them with a deep-fried medium-grade (i.e. between tilapia and sushi-grade tuna) fish.

Previous to your post, I had never heard of a 'U.S. Taco Co.'. Looked it up -- it's in Huntington Beach,, which is the wrong side of the Orange Curtain for me. But reading the menu, it looks like something Guy Fieri is involved with.

Also, the premise of the poll is incorrect. The third option is historically inaccurate, as the earliest known evidence of taco-like foodstuff indicate they were filled with freshwater fish from the area around where Mexico City is located today.
