i tried for the first time a few months ago and it was really good. It isnt nearly as greasy as beef and takes half the time to cook. I mixed it with my chili and it was phenomenal.

I haven't made it with beans, but I usually cooked up some ground beef with taco seasoning (I like Old El Paso, but whatevs), made a simple cheese sauce with colby jack and then layered tortillas, beef and the cheese sauce... topped with shredded colby jack... serve w/ sour cream.

sounds good. do you bake it? or just layer it up and it's ready to go after you melt the cheese for a few minutes?

bake it... im sure its good as is, but baking it brings all the flavors together
