Aside from the point that the prequels are just crap movies (Ep III being passable at best), the biggest problem I have can be summed up in one word.
Midi-chlorians.
It took the mystical powers of the Force and the philosophical undercurrents of the potential of the human spirit and turned into a biology class. It was a hugely disappointing creative choice, because if the movies were as they were with no mention of midi-cholorians, then you're just left with three terrible films. But by changing the fundamental nature of the Force, Lucas actually destroyed the mythos of the original trilogy and and the entire Star Wars universe is diminished.

In the days of the Old Republic, things were relaxed and groovy. Once Palpatine ascended to power as the Emperor, it turned the galaxy in to one really big fascist dictatorship.
