I really don't know what it is, but I had the oatmeal stout, and it tasted almost exactly the same as the Red IPA, save for a slight hint of roast at the end.
It has some weird, harsh taste that other beers I've tried don't have.

Just about every craft beer is bottle conditioned. In fact I don't know if I have ever had one that is not.

Well, the level of filtering certainly varies quite a bit. There's plenty of "bottle conditioned" beers that have no real visible yeast sediment, and a lot that don't have the level you'd find in belgians.
