Also for farm teams... are we only allowed to pick those who have already been drafted/signed by MLB teams (i.e. 2011 draft) or do we pick up-and-coming draftees

They have to have been draft eligible through a draft, I believe. Or maybe they need to have already been signed or drafted.

If you want to call him up, you need to sign him.
If someone gets hurt, you can use him as an injury replacement.

No, you just bring him up as an IR replacement. I carried Freeman, Kimbrel and Storen all of last year at different times as IR replacements
